Rich, chocolatey brownies with a hidden boost of spinach. These brownies were born from a chocolate craving, a little creativity, and an afternoon spent baking with my son. Soft, fudgy, and packed with chocolate chips, they’re proof that vegetables and dessert can peacefully coexist.
There are two things you should know about me: I love chocolate, and I love finding ways to spend time with my son in the kitchen.
This recipe came together on one of those days when my sweet tooth was impossible to ignore. If you’re a fellow mom, you probably understand the kind of chocolate craving that seems to appear out of nowhere, especially around that time of the month. I wanted brownies, but I also wanted an activity that Nate and I could do together.
As I gathered ingredients, I noticed a bag of frozen spinach sitting in the freezer. Like many parents, I’ve learned that sometimes getting vegetables into a toddler requires a little creativity. So I decided to experiment.
The result was surprisingly good.
These brownies are rich, chocolatey, loaded with chocolate chips, and somehow manage to hide an entire cup of spinach without tasting anything other than chocolate. Even better, Nate got to help mix, pour, and patiently wait for them to finish baking.
What I love most about this recipe isn’t that it sneaks in vegetables. It’s that it reminds me that some of the best memories happen in the simplest moments. A mixing bowl on the counter. Chocolate smudges on little fingers. A toddler eagerly waiting for dessert. And if those memories happen to come with brownies, even better.

Chocolate Chip Brownies

Ingredients
- 1 cup melted butter
- 1¾ cups sugar
- 3 eggs
- 1 tbsp vanilla
- ¾ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ tsp salt
- ½ box instant pudding mix (I used Dove Chocolate flavor)
- 1 cup frozen spinach, steamed and blended smooth
- 1 cup chocolate chips
- Dash of milk (optional, see instructions below)
Steps
- Preheat oven to 325°F.
- In a saucepan over low heat, melt the butter.
- In a blender, add steamed spinach and a very small splash of milk if needed. Blend until smooth. Set aside spinach mixture.
- Add the sugar, cocoa powder, and pudding mix to the melted butter and stir until well combined and smooth. Remove from heat.
- Stir in the blended spinach.
- Allow the mixture to cool for several minutes. Once cooled, stir in the eggs and vanilla.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Add the dry ingredients to the chocolate mixture and stir until just combined.
- Fold in the chocolate chips.
- Spread batter into a greased or parchment-lined baking pan. Bake for approximately 35-50 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs. Allow to cool before slicing.
