This is how I usually make jerk chicken at home. No grill, no long marinade, just seasoned chicken and the oven doing the work. It’s the kind of recipe I reach for when I want something that tastes like home but don’t feel like standing over the stove.

I keep the seasoning simple and let the jerk do what it’s supposed to do. A little adobo, garlic powder, onion powder, and a generous spoon of Walkerswood Jamaican Mild Jerk Seasoning. That’s it. The chicken bakes until it’s juicy on the inside, slightly crisp on the outside, and full of that classic jerk flavor.

This is the kind of chicken I’ll make with jamaican rice and peas, maybe some vegetables on the side. Easy, reliable, and always good.

Ingredients

  • 1 Family Pack Chicken Legs (thighs or quarters will work as well)
    • 1 family pack contains about 8–10 drumsticks
  • Gravy Master Browning Sauce
  • Adobo seasoning, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • 1 heaping tablespoon Walkerswood Traditional Jamaican Mild Jerk Seasoning per every 5 chicken legs. You can use less or mix 1 tablespoon with 5 tablespoons of sugar if you do not handle spice well. The Jerk flavor primarily comes from this sauce.

Steps

  1. Preheat the oven
    Preheat your oven to 400°F.
  2. Season the chicken
    Place the chicken in a bowl. Lightly season with adobo, garlic powder, and onion powder. Add a heaping tablespoon of Walkerswood Mild Jerk Seasoning and rub it into the chicken until evenly coated. Then lay the chicken in a baking dish in a neat even layer
  3. Bake
    Bake uncovered for 40–50 minutes, turning the chicken halfway through to ensure even cooking and browning.
  4. Check for doneness
    The chicken is done when the skin is nicely browned and the juices run clear. Always cook chicken to at least 165F

Serving Tip

Serve with white rice, rice and peas, or whatever sides you already have going. This chicken is simple, flavorful, and easy to pair with anything.
